With a texture similar to traditional oatmeal and a flavor profile reminiscent of banana walnut bread, it's sure to please anyone who enjoys oatmeal and banana bread!
1 banana, ripe and mashed
1/4 c blanched almond meal
1/4 c flaxseed meal
1/3 c coconut milk
2 TB walnuts
1 tsp Ceylon cinnamon
pinch of pink Himalayan salt
Maple syrup as needed to achieve desired level of sweetness
Water as needed to achieve desired consistency
1. Mash banana in bowl.
2. Add almond meal, flaxseed meal, coconut milk, cinnamon, and salt to bowl with banana and combine thoroughly by hand.
3. Microwave mixture for 45-60 seconds until oatmeal-like consistency is achieved.
4. Add maple syrup as needed to achieve desired level of sweetness and water or additional coconut milk as needed to achieve desired consistency.
5. Top with walnuts and serve.
